Measure harvest and storage losses
Record field, harvest date, gross weight, tare and net quantity.

Use one unit and a clear measurement point
Record field, harvest date, gross weight, tare and net quantity. Moisture, grading and rejected produce affect saleable output, so keep the raw measurement separate from the accepted quantity.
Track each movement into storage
Label lots and record storage location, condition checks and issues. Compare physical counts with recorded movements rather than changing the opening quantity to hide a difference.
Investigate the gap before assigning blame
Drying, handling loss, pests and measurement errors can all cause differences. Document the explanation and corrective action. A loss estimate becomes useful when the next stocktake shows whether the action worked.
